Description

80% Malbec and 20% Merlot. Grapes are destemmed and fermented in stainless steel tanks, where it stays for 15 days.  It then spends 18 months in 35 year old barrels and is very lightly filtered before being bottled. This ageing gives the wine finesse more than oak character.
Deep ruby-coloured. It is a full wine with real depth and power, but silky too. Lovely ripe black berry fruit and hints of spice. There is nothing heavy about this wine, in other words it is not the old fashioned Cahors, it is elegant well structured with ripe, fresh and expressive fruit. It will reward three or four years keeping, but can be enjoyed now with red meat, casseroles or mid strength cheeses. (DW)

The Cassot family have been making wine here since 1870. Caroline Cassot is the fifth generation. She is an instinctive winemaker, who knows her vineyards and the character of the grapes they produce to the degree that she almost creates the blends when tasting in the vineyard. They practice lutte raisonée in the vineyard, meaning as sustainable as possible with the use of any chemicals as a very last resort. Coustarelle means ‘little slope’.
